Custoza Superiore D.O.C.

"Summa" means properly "the highest part", but also the collection, the synthesis. In this way the company wants to talk about, as in a summary of their experience to enchance the land, its varietal expressions along with its mineral strength.

Grape varieties: Garganega (40%), Bianca Fernanda (30%) and other varieties like Trebbiano and Trebbianello, with 5% of Riesling.
Vineyard: Gujot and Cordone Speronato, in Custoza and Sommacampagna. Selection from the ancient vineyards (50-60 years old).
Harvest: Very late (except for Trebbianello variety, 5%). We wait until the first and second week of October before collecting to obtain a long phenolic ripeness (concentrative) in the vineyard. The harvest is manual and also requires a careful grapes selections: mature but in perfect condition.
Vinification: The grapes are fermented together to fully express the character of the area.
The fermentation takes place at a cold controlled temperature, with a long stop on natural yeasts until May.
Ageing: Stainless steel only, then is bottled and follows the further evolution in the bottle.
Colour: Intense straw yellow.
Bouquet: Mediterranean bouquet (especially orange blossom and jasmine), together with peach and ripe fruits, old rose with a hint of vanilla.
Flavour: The palate is broad, savory, with minerals and ripe fruits. Dry without asperity. Soft, smooth, round, full bodied with harmonious final. Serving temperature 10/11.
Alcohol level: 13% vol
Food pairings: All handmade pasta dishes with Mediterranean sauces; white meat, ham, medium-aged cheeses. Perfect with shellfish, seafood carpaccio or more complex fish dishes.
